Okada's commitment
Beyond carefully selecting the finest seasonal ingredients from the market, we also feature fresh, locally grown Nara vegetables (Yamato-yasai).
The soul of our cuisine lies in our rich Dashi (soup stock). We use an abundance of Ma-kombu (premium kelp from southern Hokkaido) for its deep, intense umami, combined with aromatic Honkarebushi (aged dried bonito flakes) from which the bloody parts have been meticulously removed. This ensures you can fully savor both the profound depth and the delicate fragrance of our dashi.
We also take great pride in the tableware that colors each dish. Our presentations are crafted with care so that you may appreciate the changing seasons through your eyes as well.
